Make yuzu salt by pickling some yuzu fruit.

1. Chop the flesh of the yuzu fruit. In a clean jar, make alternate layers of the salt and yuzu, then top with plenty of salt.
2. Let it mature in the fridge for 1 week, and then it's ready!
