Chicken Quesadilla

Chicken Quesadilla

Easy and delicious! Great for a single lunch or for parties.

Ingredients: 2 servings

Onion
1/4
Asparagus
3
Green bell pepper
1/2
Celery
1/2
Chicken strips
60 g
Coriander, optional
1 tablespoon
Taco seasoning
1/2 bag
Shredded cheese
to taste
Tortillas

Olive oil
1 tablespoon
Water
2 tablespoons

Steps

1. Chop and mince all of the ingredients!
2. Cook the vegetables (except the coriander) in olive oil. If you don't have chicken strips, you can lightly season some breast meat with salt and pepper and cook separately.
3. You can use any brand of taco seasoning that you want.
4. Once the vegetables have been lightly cooked, add the taco seasoning and 2 tablespoons of water. Let it boil down and then add the chicken and coriander.
5. Place a tortilla in a frying pan and top with cheese (as much as you want). Heat it up over low heat.
6. Top Step 5 with the ingredients from Step 4. Top that with some more cheese. (It tastes best if you use a lot of cheese.)
7. Cover with another tortilla and cook both sides for 2-3 minutes.
8. It should brown about this much! Cut into any size.
9. You can use any type of tortilla.

Story Behind this Recipe

I came up with this when I was thinking of a simple but delicious single serving lunch! You can eat it with sour cream or salsa to make it taste even better.
