Sushi Hand Rolls

These hand rolls are filled with good fortune.

Ingredients: for 2 rice cooker cups' worth of rice

White rice
2 rice cooker cups' worth (360 ml)
Kombu for dashi stock
3 or 4 cm
○Rice vinegar
40 ml
45 g
a pinch
Your choice of fillings


1. Cook the rice with the kombu.
2. As soon as it's cooked... add the mixed ○ ingredients, and mix with a cutting motion.
3. Spread the rice into a thin layer, and cover with a damp cloth until cool.
4. Chop up your choice of filling ingredients, then you're done!
5. Additional point: Enjoy this Fuku-cha tea to go with it (also for good fortune). It's made by pouring hot water over umeboshi, salted kombu, and toasted soy beans. All of these ingredients are all symbolic for luck and are used in celebrations, such as Setsubun.
