Chop the beet and potato into small pieces and microwave for 6 minutes.
Mash the beet and potato, add the seasoning, and it's done!
Variation: Wrap in plastic wrap, roll it out and cut it out with a cookie cutter.
You can easily make a bright red heart-shaped salad.

This is a delicious potato salad made with beets, a standard ingredient in Russian cooking. I wanted it to be tart, yet mild, so I used yogurt and kept it low in calories. The addition of basil gives it an extra punch.
