Simmered Red Sole

This recipe was used in Hyogo Prefecture's local fish promotion project.

Ingredients: 2 servings

Red sole
A) Ginger (thinly sliced)
1 knob
A) Water
200 ml
A) Sake, Mirin, Soy sauce
2 tablespoons each
A) Sugar
1 tablespoon


1. Remove the scales, head, and guts of the sole. If it is a large fish, cut it in half.
2. Put the A) ingredients into a pot and bring to a boil.
3. Add the sole and cover with a drop-lid. Simmer on medium heat for 10 minutes.
