Onion and Ginger Soup

Onion and Ginger Soup

This is a delicious soup containing onion and ginger, which are said to warm the body. It's perfect for those times when you need a pick-me-up or if you have the chills.

Ingredients: 3-4 servings

1 large
15-20 g
Consomme soup stock cubes
1200 ml
Soy sauce
1~2 teaspoons
Vegetable oil
as needed
Parsley (optional)
as needed

1. Cut the onion in half, then slice thinly. Slice the ginger finely.
2. Put a little vegetable oil in a saucepan and fry the onion and ginger over medium heat. When the onion has browned and wilted, add the water and soup stock and turn the heat to high.
3. When it has boiled, turn the heat down to low-medium, and simmer for 15 minutes, skimming off the scum when necessary. Add the soy sauce to finish. Sprinkle parsley if you prefer. Check the taste and adjust the amount of soy sauce as necessary.

Story Behind this Recipe

I'm sensitive to the cold, so I tried making a soup with warming ingredients. I'm really into soup with consomme stock cubes, so I used them for the base flavour of this soup.
