Cover the bottom of a frying pan with bonito flakes. Put the cut firm tofu on top.
Sprinkle the sugar, sake and mentsuyu on top of the tofu and shake the pan. Turn on the heat, and simmer over medium heat for a while.
When the seasoning have been absorbed by the tofu, turn them over, put the lid back on and simmer over low heat.
Take the lid off and pour in the beaten egg. Mix gently so that you don't break up the tofu. Turn off the heat.
Transfer to serving plates, and garnish with chopped green onion.
Story Behind this Recipe
This is a tofu dish we have for breakfast a lot in our house. When we have grilled fish or another dish that's quite salty, this sweet-salty flavor matches well.
Please adjust the amount depending on the volume of the eggs. In Step 4, don't overcook the eggs. Stop when they are still creamy. The dish is delicious like that. If you make this with silken tofu, the eggs will be soft due to the moisture that comes out of the tofu.
