Vegetarian Fried Spring Rolls

I pan-fried them instead of deep-frying them so they have fewer calories.

Ingredients: 4 servings

Green peppers
Cellophane noodles
1 pack
Shiitake mushrooms
to taste
Soy sauce
to taste
Sesame oil
to taste
Spring roll wrappers
8 sheets


1. Cut the green peppers, carrots and mushrooms into thin strips. Rehydrate the harusame and chop into bite-sized pieces.
2. Heat sesame oil in a frying pan and fry the green peppers, carrots and mushrooms. When they are slightly cooked, add the harusame and stir fry. Add salt and soy sauce while stirring.
3. On a spring roll wrapper, evenly place the filling from step 2 and spread flour dissolved in equal amount of water along the edge of the wrapper and roll it up.
4. Place the spring rolls on a frying pan with oil, and fry until they are browned on both sides.

Story Behind this Recipe

It takes time to deep fry the spring rolls, so I decided to make them with fried vegetables adding no meat to pan fry them. It's easier to cook and you'll have less washing up to do afterwards!
