Inexpensive & Healthy Chicken and Egg Rice Bowl

I made this with cheap breast meat. It's also relatively healthy as you remove the skin and don't add sugar to the sauce.

Ingredients: 2 servings

Plain cooked rice
as much as you like
Chicken breasts
150 g
Onion
1/2
Eggs

◎Dashi stock
200 ml
◎Soy sauce
2 tablespoons
◎Mirin
2 tablespoons
◎Cooking sake
1/2 tablespoon

Steps

1. Remove the skin from the chicken breasts, and cut into bite-sized pieces. Marinate with sake (not listed) for about 30 minutes.
2. Add all the ◎ ingredients and onion to a frying-pan, and simmer for about 3 - 5 minutes over a low heat.
3. When the onion changes colour slightly, add the chicken breasts, and continue simmering for another 5 - 10 minutes over low heat.
4. When the chicken is cooked through, pour in the beaten eggs from the side of the pan, and stir slowly.
5. Put the rice in a bowl, add the chicken and egg on top, and it's done!

Story Behind this Recipe

It doesn't quite have the light, fluffy texture of the sugar version, but when I'm being health-conscious I am happy with this.
