Mix the rice flour and salt together. Dissolve the sugar in some water at body temperature and add it gradually to the flour mixture, stirring each time. Then add 1/2 teaspoon of olive oil and mix it in.
Once mixed, use a spatula to bring the dough together, using crushing motions to get rid of any lumps, and once the dough is no longer floury, gently start to knead it with your hands. Then leave the dough to rest for a while.
Preheat your oven to 230℃. Gently roll out the dough on top of some parchment paper with a rolling pin dusted with flour. Lightly coat the top of the dough with some olive oil.
Top the dough with your desired toppings, bake for 13 minutes, and it's done!

I had some gluten-free rice flour and wanted to try making an easy pizza recipe that didn't require proving.
Using these ingredients, I usually make 2 pizzas. This way you have two variations: crispy or thick.
Example topping: 1. Coat the whole thing with olive oil. 2. Place a sliced boiled egg on top. 3. Thinly slice up some bacon and sprinkle it over the top. 4. Coat the top with mayonnaise. 5. Sprinkle over some shredded pizza cheese. 6. Lightly coat with olive oil.
