Plain cooked rice
1 rice cooker cup's worth (180 ml uncooked)
About 1 tablespoon
about 1/2 tablespoon
about 1/2 teaspoon
Roast beef
as needed
as needed
Toasted sesame seeds

as needed
Shiso leaves, wasabi
as desired

1. Cook the rice a little firmer than usual, then mix in the vinegar, sugar, and salt with the rice paddle using cutting motions. Check the taste and adjust the seasoning if necessary.
2. Divide the sushi rice into 2 portions. Mix one portion with the toasted sesame seeds. This will be for the cured ham.
3. Cut the roast beef slices in half and put 1 slice on top of some plastic wrap. Top with a bite-sized amount of sushi rice.
4. Use the plastic wrap to squeeze it all into a round shape.
5. For the cured ham, put some mayonnaise between the rice and the ham. Shape in the same way as you did the roast beef.
6. Top the roast beef with wasabi and the cured ham with shredded shiso leaves.
7. Use soy sauce or roast beef sauce to garnish the roast beef sushi. The cured ham sushi is good as-is.
