Put the okara, katakuriko, dashi stock granules, and the milk into a bowl. Knead until it's as soft as your earlobes.
Form into bite-sized round patties. Poke a hole in the center with a chopstick and shape into a donut. Heat some oil in a frying pan, and fry both sides of the patties over medium heat until slightly browned.
Combine all ● ingredients. Mix into the frying pan from Step 2 and coat the patties to finish.
Story Behind this Recipe
I wanted to make a side dish with okara dumplings. Since my family didn't realize they were okara, I decided to post this recipe here.
Make your dumplings into a donut-shape so that they resemble peeled shrimp. Since the hole shrinks when they are cooked, make it slightly larger. Adjust the amount of milk according to the consistency of the mixture. You can also use 150 g tofu (no need to drain) instead of milk. The dumplings will become hard when they are cold, so please enjoy them freshly cooked.
