Mom's Tofu and Wakame Miso Soup

This is one of the recipes I'm writing down to pass down to my daughter. This recipe uses dashi stock granules so it's amazingly easy.

Ingredients: 4 servings

Tofu (silken)
1/2 block
Wakame seaweed (dried)
to taste
Green onions or scallions
1 stalk
4 cups (800ml)
Dashi stock granules
1 tablespoon
4 tablespoons


1. Cut your tofu into small cubes, and chop your green onions.
2. Boil the water in a pot, and dissolve the dashi stock granules.
3. Once the water comes to a boil, lower the heat, and mix in the miso, dissolving it gradually into the water. Add in the tofu and dried wakame seaweed, and bring to a gentle simmer.
4. Adjust the taste of your soup as desired, and turn off the heat. Ladle into soup bowls, and sprinkle on some of the chopped green onions as desired.

This is super easy recipe, since it uses dashi stock granules and dried wakame seaweed. It's definitely the way to go if you're short on time.
