Chicken Curry Soup with Soy Beans and Chicken

This hearty soup is packed with soy beans and vegetables. It's subtly curry-flavored.

Olive oil
1 tablespoon
●Soy beans (canned, cooked in water)
150 g
100 g
●Daikon radish
100 g
200 g
●Chicken thigh meat
100 g
1500 ml
Soup stock cubes
Curry powder
1 1/2 teaspoons
to taste


1. Roughly chop the celery and onion. Dice the other vegetables into 6-7 mm cubes. Also chop the chicken into similar sizes.
2. Heat olive oil, celery, and onion in a pot. Sauté the celery and onion over medium heat until softened.
3. Add all the ● ingredients, water, and the soup stock cubes into the pot from Step 2, and turn the heat to high. When the mixture comes to a boil, turn the heat to medium low. Simmer slowly and skim off any scum.
4. Simmer for 30 minutes, then mix in the curry powder. Season with salt to finish.

I had this delicious soup at a cafe that was served with bread. I liked it so much that I tried recreating it at home.
