Tofu Chocolate Chip Muffins

Simple, healthy, and chewy!
These are so delicious that I make them all the time.

Ingredients: 5-6 muffin cups

★Pancake mix
200 g
★Cocoa powder
2 tablespoons
Silken tofu (no need to strain)
200 g
Sugar (I use light brown)
20 - 40 g
Eggs
2
Butter
40 - 50 g
Chocolate chips
a lot

Steps

1. Melt the butter in the microwave. Combine the ★ ingredients.
2. Combine the sugar and egg and beat very well.
3. Break up the silken tofu with your hands, add it in, and mix it in very well.
4. Add the butter and mix that in very well too.
5. Add the ★ ingredients in 2-3 batches, gently stirring with a rubber spatula with each addition.
6. Lastly, add the chocolate chips and lightly stir them in.
7. Pour the batter into muffin cups until about 70% filled.
8. Bake in an oven heated to 190℃ for 25-30 minutes. If there isn't any raw batter stuck on an inserted skewer, they're done! Let them cool and enjoy.
9. You can also make these in a pound cake pan.
