Lotus Root Salt Kinpira For Obento

It's light and tasty, made with sake, mirin and salt.

Ingredients: 2 servings

Lotus root
150 g
Red chili pepper (sliced)
Japanese soup stock (granules)
1/2 teaspoon
1 tablespoon
1 tablespoon
1 scant teaspoon
1/3 teaspoon
Sesame oil
a small amount
White toasted sesame seeds
a small amount


1. Peel the lotus root and slice into 2-4 pieces vertically. Soak in water with a little vinegar added in, changing the water once. Drain the water.
2. Put the sesame oil in a frying pan and fry the red chili pepper on a low heat. Add the thinly sliced lotus root and fry on a high heat.
3. Add the Japanese soup stock and ● ingredients, and continue to fry on a medium to high heat until the liquid evaporates.
4. Transfer to a serving dish and sprinkle with white sesame seeds.
