Easy Chocolate Chip Tofu Muffins

Simple, healthy, and springy!
These are so good that I make them all the time.

Ingredients: 5-6 muffins

Pancake mix
200 g
Silken Tofu (unstrained)
200 g
Sugar (I use light brown sugar)
20 to 40 g
40 to 50 g
Chocolate chips
as needed


1. Melt the butter in the microwave.
2. Use a whisk to combine the milk and eggs.
3. Break up the tofu with your hands as you add it to Step 2 and mix it in well.
4. Add the melted butter and mix it in well.
5. Add the pancake mix in 2 or 3 batches, lightly mixing it in with a rubber spatula after each addition.
6. Lastly, add the chocolate chips and mix them in lightly.
7. Pour the batter into the muffin cups until about 70% filled.
8. Bake for 25-30 minutes at 190°C. When the batter doesn't stick to an inserted skewer, they're done! Let them cool and then enjoy.
9. You can also make this using a pound cake pan.

I usually make muffins with flour, but I was given a bunch of pancake mix. So I tried making muffins with it and it turned out to be easy and delicious.
