Warm Noodles for Cold Days Chicken Soba Noodles

A bowl of warm soba in a richly flavored dashi broth Help yourself to this on a cold day.

Ingredients: 1 serving

Soba mentsuyu
300 ml
☆Dashi stock granules
1/2 teaspoon
☆Soy sauce
2/3 tablespoon
1 tablespoon
a pinch
Other ingredients
Chicken thighs
about 1/4
Green onions
to taste
Soba (dried, fresh, etc)
1 serving


1. Cut the chicken into bite sized pieces, rinse in boiling water, and drain in a strainer.
2. Add all of the ☆ ingredients to a pot and bring to a boil for the mentsuyu.
3. Add the chicken to the pot from Step 2 and bring to a boil. Remove any scum as soon as it forms.
4. Boil the soba to your desired firmness and drain in a strainer.
5. Transfer the noodles and the mentsuyu in a dish and it's complete Top with minced green onions if you like.

Story Behind this Recipe

My husband asked me for soba for lunch. So I added some leftover chicken and created the broth.
Without any chicken, the ingredients become tenkasu and green onions.
