Easy Cooking in One Pot - Silken Tofu with Mushroom Ankake Sauce

When the cold weather sets in, you feel like eating something warm.
This dish warms you up from the inside with the ankake sauce that has a nice mushroom flavor.

Ingredients: 1 tofu block worth

Silken tofu
1 block
Enoki mushrooms
1 packet
Green onions (chopped)
as needed
For the sauce
Water
200 ml
Mentsuyu (3x concentrate)
2 tablespoons
Mirin
2 tablespoons
Japanese dashi soup stock (granules)
1/2 teaspoon
For the katakuriko slurry:
Katakuriko
2 teaspoons
Water
2 teaspoons

Steps

1. Remove the stems of the enoki mushrooms and cut it into 3 even lengths.
2. Add the sauce ingredients and Step 1 enoki mushrooms into a pot and turn on the heat. Cut the silken tofu into your desired size and add to the pot.
3. Simmer for a while. Thicken with the katakuriko slurry and turn off the heat.
4. Serve in a bowl and garnish with green onions.

Story Behind this Recipe

I had a bag of enoki mushrooms on hand, so I added them to my usual breakfast tofu dish and created a new variation.
