Easy Non-Fried Yet Authentic Tasting Daigaku-Imo in the Microwave

This dish is satisfying with just 1 sweet potato.

Ingredients: 2-3 servings

Sweet potato
1
★Vegetable oil
1 tablespoon
★Sugar
2 tablespoons
★Honey
1 tablespoon
★Soy sauce
1 tablespoon
★Water
1 heaped tablespoon
Black sesame seeds
as needed

Steps

1. Wash and soak the sweet potato.
2. Heat the sweet potato in the microwave for 6 minutes (500 W). If the chunks are soft enough to be pierced all the way through with a fork then they're ready.
3. Add the ★ ingredients to a saucepan (adjust the amounts to your taste) and heat over low heat until the mixture begins to thicken. Then add the sweet potato.
4. If you give the sweet potato a quick str-fry before adding it to the other pan they'll be nice and crispy like normal fried daigaku-imo.
5. When the potato has mixed with the seasoning, sprinkle some black sesame seeds over the top and it's ready.

Fried foods take a lot of effort to make and I wanted to make my favorite daigaku-imo in a quick, healthy, and delicious way. This quick and easy dish is perfect for bento lunches or as a snack.
