Easy 5 Minute Italian Style Eggplant & Bacon

Just adding grated garlic to some olive oil already makes this taste Italian! The Parmesan cheese really boosts the flavor too!

Ingredients: 1-2 servings

Eggplant (slim Japanese type)
1 slice
Olive oil
1 tablespoon
Grated garlic
to taste
to taste
to taste
Grated Parmesan cheese
1 1/2 tablespoons
Dried parsly (optional)
to taste


1. Cut the eggplant in half vertically and then into 7mm slices. Cut the bacon into 1cm wide slices.
2. Heat the frying pan and add the olive oil and grated garlic. Add the eggplant and bacon from Step 1 and cook.
3. Once the eggplant has become tender, flavor with salt, pepper, and Parmesan cheese. Stop the heat.
4. Transfer Step 3 to a dish and garnish with dried parsley.
