Egg-free Fluffy Pancakes

This is an egg-free recipe for pancakes.

Ingredients: 8 pancakes

Bread (strong) flour
100 g
Baking powder
5 g
20 g
Soy milk
150 ml


1. Weigh the dry ingredients. Use a whisk to combine.
2. Stir in the soy milk.
3. Pour the batter onto the nonstick frying pan or electric griddle. If you use a very thin layer of oil, they will brown nicely.
4. Once the batter begins to bubble, flip over and cook for 2 minutes.
5. Top your pancakes with lots of butter and syrup.

Story Behind this Recipe

I didn't have any ready-made pancake mix on hand or bread to serve for breakfast, but these were perfect. My 2 year old gobbled them up!
