Microwaved Onion Gratin-style Soup

Microwaved Onion Gratin-style Soup

Prepare some onions in the microwave for an easy soup.
There's no frying involved, but you'll still have a lovely baked cheese color.
It's vegetarian friendly.

Ingredients: 8 cups worth

1 (300 g)
20 g
Consommé cubes (or kombu based dashi stock - 2 tablespoons)
4 cubes
Easily melting cheese
80 g

1. These are the only ingredients.
2. Slice the onion and top with butter.
3. Cover with a lid or plastic wrap and microwave (using the "boil root vegetables" setting, if available).
4. Add the cheese and consommé and microwave (using the same setting) again.
5. The cheese and onion will begin to burn slightly on the edges and turn golden brown.
6. Stir once and then microwave uncovered until it becomes cooked to your desired taste.
7. It will equal about 160 g, so separate into 8 portions.
8. Add one portion to a cup, pour in some hot water, mix very well, and you're done.
9. For a vegetarian version, instead of consommé, use 2 tablespoons of kombu dashi and it will still be delicious.

Story Behind this Recipe

This homemade soup is perfect for the wintertime.
The sweetness and fragrance of the onions will really come out while microwaving.
You can also dip crunchy toast into the soup or sprinkle with grated cheese if preferred.
