200 g pre-soaked in water overnight, drained, and blended in a VitaMix or a mixer
White sesame seeds
Put all the ingredients in a bowl and mix them gently with a spatula.
Use small ice cream scoop to shape the mixture into small cookies, and arrange them on a mesh rack.
Dry them for 12 hours in a dehydrator.
Story Behind this Recipe
I'm working on increasing the amount of raw food recipes using a dehydrator. I wanted to use a main ingredient other than nuts this time, so I made this version of raw cookies with rice as the key ingredient.
The stickiness of the cashew butter and raw honey brings the rice flour together. Enjoy the grainy texture.
