Raw Rice and White Sesame Cookies

I tried to make Japanese sweet-like cookies. I used a VitaMix to blend the rice into dough.


White rice or brown rice
200 g pre-soaked in water overnight, drained, and blended in a VitaMix or a mixer
Cashew butter
40 g
Raw honey
40 g
White sesame seeds
1 tablespoon


1. Put all the ingredients in a bowl and mix them gently with a spatula.
2. Use small ice cream scoop to shape the mixture into small cookies, and arrange them on a mesh rack.
3. Dry them for 12 hours in a dehydrator.

Story Behind this Recipe

I'm working on increasing the amount of raw food recipes using a dehydrator. I wanted to use a main ingredient other than nuts this time, so I made this version of raw cookies with rice as the key ingredient.
