Combine all the ingredients except for the oil and chocolate chips in a plastic bag, puff up the bag with air, zip it up, and shake to mix.
Add the oil and squeeze to mix.
Once it all comes together, remove from the bag, form into balls, and lightly flatten.
Top with the chocolate chips and arrange along the outer edge of a plate lined with kitchen parchment paper.
Cook uncovered in the microwave at 600 W for 2 minutes. (If your microwave is 500 W, cook for 2:20.)
Let sit for a bit to harden and enjoy.
When hot, the chocolate will be melted, so be careful! It's soft when freshly baked, but will harden once cooled.
Story Behind this Recipe
This is a variation on a chocolate cookie recipe from a book my child borrowed from the library.
If you don't have a turn-table microwave, please arrange the cookies in the center. They're pretty sweet, so for me, 2 tablespoons of sugar is enough, but my kids seem to like it sweeter with 3 tablespoons of sugar. Please adjust the amount of sugar according to your preference. If you microwave the cookies for too long, they'll burn, so be careful!! Adjust the cooking time as necessary (since each microwave appliance is different!)
