Peel the kabocha and remove the seeds. Cut into 2 cm wide, 1 cm thick pieces.
Place the kabocha pieces, raisins, sugar, and consomme in a pot and add enough water to just cover the ingredients. Simmer on medium-low heat until the kabocha is soft.
Once the kabocha softens, drain and place in a bowl to cool.
You can add as much mayonnaise as you want, but this is how much I use.
Add the mayonnaise and mix it up. It's done.
Story Behind this Recipe
I saw this side dish sold by weight in the supermarket. But I figured I could just make it myself at home! So I did. My kids have been requesting this kabocha salad ever since they were small.
Please adjust the sweetness as necessary. Of course you don't have to use raisins if you don't want to. If you want to microwave the kabocha to soften it, add the sugar (a little less than the amount listed) and consomme when you're mashing the kabocha.
