Easy Sweet Kabocha & Raisin Salad

This salad brings out the sweetness of the pumpkin. It can be made very quickly. The texture of the raisins is so much fun. It can also be used as a side dish in a bento.


Kabocha squash
350 g
50 g
1 tablespoon
Consomme soup stock granules
1/2 teaspoon
as needed
2 to 3 tablespoons


1. Peel the kabocha and remove the seeds. Cut into 2 cm wide, 1 cm thick pieces.
2. Place the kabocha pieces, raisins, sugar, and consomme in a pot and add enough water to just cover the ingredients. Simmer on medium-low heat until the kabocha is soft.
3. Once the kabocha softens, drain and place in a bowl to cool.
4. You can add as much mayonnaise as you want, but this is how much I use.
5. Add the mayonnaise and mix it up. It's done.

Story Behind this Recipe

I saw this side dish sold by weight in the supermarket. But I figured I could just make it myself at home! So I did. My kids have been requesting this kabocha salad ever since they were small.
