L'alapan' Balinese Fried Chicken

This Balinese fried chicken is seasoned and deep-fried for a crispy skin and juicy center.

Ingredients: 1 serving

Chicken thigh meat
150 g
Salt
1 teaspoon
Vinegar, sake
1 tablespoon each
A. Canned tomato
2 tablespoons
A. Sake, mirin, mentsuyu
1 tablespoon each
A. Sugar, chili sauce (or doubanjiang)
1 teaspoon each
Vegetable oil
as needed

Steps

1. Quickly boil the chicken until the surface changes color.
2. Cut notches into the center of the chicken from Step 1. Sprinkle salt on both sides and season with vinegar and sake.
3. Add a large amount oil to a frying pan. Place the chicken in the pan with the skin side down and fry as you scoop the oil over the top of the chicken. Cut into pieces once the chicken is arranged on a plate.
4. Combine the A. ingredients and microwave for 1 minute. Spread the sauce on a plate and place the chicken on top. It's done.

Story Behind this Recipe

Bali is a country that doesn't eat pork and/or beef because of religious beliefs. This lalapan is a local specialty. A lot of food vendors sell this. I think I've almost replicated the quality.
