Real Chinese-style Shrimp with Mayo (Aurora Sauce)

I make this when I have a hankering for some delicious shrimp and mayonnaise without having to worry about calories. This dish with crispy, tender shrimp and rich sauce is the best.

Ingredients: 4 servings

200-250 g
● Katakuriko
1 tablespoon
● Egg white
1/2 egg's worth
● Sesame oil
1/3 teaspoon
Vegetable oil
as needed
Aurora sauce
3 heaping tablespoons
Condensed milk
1-2 tablespoons
1 1/2 tablespoons
1/4 teaspoon
White pepper
a small amount
Lemon juice
1 ~ 2 teaspoons


1. Peel the shrimp, leaving the tail on. Make a shallow slice along the back and devein.
2. Coat the shrimp with salt and katakuriko (not listed in ingredients). The katakuriko will absorb the dirt and smell.
3. Rinse under running water. If the water looks blackish, it's dirty. This step takes a little bit of time but helps ensure nice-tasting shrimp.

5. Store-bought condensed milk can vary in sweetness, so please adjust it to your taste. You can use tomato paste instead of ketchup for a less sweet sauce.
6. Peel the cucumber and slice into slightly thick strips. Soak them in water to crisp them, then dry them off and spread them out on a dish.
7. Dry off the shrimp with a paper towel and season with the ingredients marked ●.
8. Put a good amount of oil in a frying pan and pan fry the shrimp.
9. Flip and fry the other side, as well. Once the shrimp have become fluffy and crispy, take them out of the oil and let them rest on top of some paper towel sheets so their excess oil can get absorbed. They will cook quickly, so be careful not to overcook them.
10. Gently mix the sauce into the cooked shrimp.
11. Place them on top of the cucumber and you're finished. It looks so good.

Shrimp with aurora sauce is so delicious that my family enjoys eating it with an ample helping of vegetables. If you skin the cucumber, the color really softens the look of the dish and brings it up a notch, but you can leave the skin on. Be careful not to use too much sauce so as not to lose the crispy texture.
