Gluten-Free! Chocolate Chip Cookies

I made these with Amaranth flour, but I think they will turn out fine if you use a different type of gluten-free flour. They can also be made non-dairy or sugar-free.

Ingredients: 12 cookies

Amaranth flour (or any type of flour)
150 g
Baking soda
1/2 teapooon
Sea salt (or regular salt)
1/2 teaspoon
Coconut Oil (or unsalted butter)
110 g
Stevia (or brown sugar)
3/4 cup (if using Stevia, just approximate the amount)
Vanilla essence
1/2 teaspoon
Large egg
Carob chips (or chocolate chips)
1 cup
Your choice of nuts (optional)
1/2 cup


1. Preheat the oven to 190°C. Grease a baking tray or line it with parchment paper.
2. Combine the gluten-free flour, baking soda, and salt in a bowl.
3. In a separate bowl, add the egg and brown sugar. Whip until it becomes fluffy.
4. Add the butter to Step 3 and use a whisk to stir it in. Add the vanilla.
5. Stir the powdered ingredients from Step 2 into Step 4.
6. Add in the chocolate chips and nuts (chopped).
7. Scoop out the batter into cookie shapes and bake for 9-11 minutes. Once baked, let them cool and enjoy.
