Chinese-Flavored Ginger and Cellophane Noodles

An easy salad - just toss the ingredients. Add plenty of ginger to make a Chinese-flavored salad with a punch.

Ingredients: 3-4 servings

Cellophane noodles
30 g
Ginger (julienned)
1 thumbtip's worth
Cucumber

Carrot
1/3
Roasted sesame seeds
as needed
To make the Chinese-style sauce:

Vinegar
2-3 tablespoons
Sugar
1-2 teaspoons
Sesame oil
2 teaspoons
Water
2 tablespoons

Steps

1. Rehydrate the cellophane noodles as instructed on the package, then cut into easy-to-eat lengths.
2. Slice the cucumber in half lengthwise, then thinly slice diagonally. Julienne the carrots and combine with the Chinese style sauce.
3. Add plenty of thinly sliced ginger to taste, toss, then it's done.
4. Add ra-yu (not listed above) to taste for an even more delicious flavor.
