Negi-Meshi (Rice with Leeks) from a Ramen Noodle Bar

I love the negi-meshi I ate at a ramen noodle bar in Yokohama. Here's my try on recreating the dish!

Ingredients: 2 servings

Japanese leek (the white part)
Green scallions
1/3 bunch
1 teaspoon
★Shio-koji (salt fermented rice malt)
1 teaspoon
★Sake, mirin
1 teaspoon
Sesame oil
1 tablespoon
Toasted sesame seeds
As needed
To taste


1. Chop the leek and scallion into small rounds. If you'd like, soak in water to remove the spiciness.
2. Mix all ★ condiments and microwave. 10 to 20 seconds is fine, since it's only to evaporate the alcohol.
3. Mix the condiments from step 2. Add sesame oil.
4. Scoop rice into a rice bowl. Top with pepper that is coarsely ground, the condiments from step 3, leek, and scallions. Sprinkle toasted sesame seeds and serve.

Story Behind this Recipe

I really love the delicious negi-meshi that I ate at a ramen place called "Rasuta" in Yokohama. Because it would be difficult to make a perfect recreation, I made this recipe hoping it would be something similar. Of course, this is nothing compared to the real thing, but it's still delicious and satisfying for my husband.
