Pressure Cooker • Soft-Simmered Squid and Daikon Radish

Cook for 2 minutes in the pressure cooker. Let sit.
That's all that you need to make the squid surprisingly soft.

Ingredients: 4 servings

Daikon radish
to taste
● Soy sauce
2 tablespoons
● Mirin
2 tablespoons
● Sugar
1/2 tablespoon
● Water
100 ml

1. Cut the daikon radish into 1.5 cm slices. Remove the entrails from the squid, and chop into 1 cm wide pieces. Cut the tentacles into halves.
2. Put all the ● ingredients into a pressure cooker. Cut the konbu into pieces with scissors and add into the pressure cooker along with the daikon and the squid.
3. Cook for 2 minutes under pressure. When cooked, let rest for a while.
4. Take the lid off and simmer to reduce slightly.

Story Behind this Recipe

If you use a pressure cooker, even squid will turn out soft, so I wanted to give it a try.
