Stir-Fried Chicken and Eggplant with Mayonnaise and Ponzu

Mayonnaise and ponzu give a rich and zesty flavour.
This goes very well with rice!
You can cook it easily and quickly.

Ingredients: 1-2 Servings

Chicken thigh meat
150 g
Eggplant
1
Green pepper
1
Mayonnaise
1 1/2 tablespoons
Ponzu
2 tablespoons
Salt and pepper
to taste

Steps

1. Cut the chicken into bite-sized pieces and sprinkle salt and pepper.
2. Slice the eggplant lengthwise into sixths, and then cut in half. Slice the green pepper lengthwise to make strips.
3. Heat one tablespoon of mayonnaise in the frying pan.
4. Add the chicken pieces and stir fry.
5. Once the chicken cooks through, add another 1/2 tablespoon of mayonnaise, eggplant and green pepper. Stir fry some more.
6. When the mayonnaise has coated everything evenly, add ponzu sauce and cook until eggplant wilts.
7. Adjust the taste with salt and pepper.

Story Behind this Recipe

I often cook stir fried meat and vegetables with mayonnaise and soy sauce.
But I wanted to add a zesty taste, so I added ponzu sauce. It goes really well with mayonnaise.
