The Flavors of the Seto Inland Sea - Mackerel with Miso-Mayo in a Bento Box

In the area surrounding Japan's inland sea, when you think of sashimi, you think of mackerel! Pickled mackerel is used in local sushi party bentos. Using that mackerel we all know and love, I made this bento side dish.

Ingredients: 1 person's bento

Japanese Spanish mackerel
1/2 of 1 slice
Miso
1 tablespoon
Mayonnaise
2 tablespoons

Steps

1. Remove the bones from the fish and cut into bite-sized pieces.
2. Place on a heat-resistant plate and top with a mixture of blended miso and mayonnaise. Broil for 10 minutes in a toaster oven. (This photo shows two servings.)
3. When it's finished, serve with greens (like mizuna greens) for a colorful presentation.

Story Behind this Recipe

I created this recipe in hopes that my children who don't care for fish would like it.
Simply top with sauce and broil. It's very easy to make even on busy mornings.
