Eggplant & Green Pepper with Sweet Miso

This is perfect for a bento dish.
You can easily make this even on busy mornings.

Ingredients: 2 servings

2 small
Green peppers
1 tablespoon
1 tablespoon
1 teaspoon
Vegetable oil
2 tablespoons


1. Peel 3 strips of skin from the eggplant. Cut into bite-sized pieces. Also chop the green pepper into bite-sized pieces.
2. Heat vegetable oil in a frying pan. Add the eggplant.
3. Once the eggplant has been coated with the oil, cover with a lid and steam until completely cooked.
4. Add the green pepper and continue cooking.
5. Add the sugar, mirin, and miso and quickly coat the ingredients to finish.
