Chestnut Chocolate Sticks Using Homemade Sourdough Starter

You can't beat fragrant chocolate and chestnuts in fluffy lean dough.
I'm always reaching for another.

Ingredients: 5~10 sticks

All purpose flour
180g
Chestnut flour
20g
Homemade sourdough starter
70g
Unrefined Sugar
5g
Salt
2.5g
Water
100~110g
○Chestnuts Simmered in their Skins
80g
○Couverture chocolate
40g
○Walnuts
30g

Steps

1. Mix the flour ingredients in a bowl. Add the water and homemade sourdough starter and press together into a ball until it is no longer floury for the first rising.
2. Roast and chop up the walnuts and cut the chestnuts into small slices.
3. Cut into 5 parts, make round again, and let rest for 20 minutes.
4. Spread out long and flat and add the ingredients labled ○.
5. Wrap up and cut in half.
6. Roll longer then line up on a bread mat for the second rising.
7. Heat the oven to max, then lower to 230℃ and bake for 15-18 minutes.
8. It may be a bit of work but it's more delicious with all the ingredients rolled up inside.
