Easy Simmered Daikon Radish and Soft Boiled Eggs

This takes no time at all to cook because the daikon radish is parboiled in the microwave. It goes really well with soft boiled egg.

Ingredients: 4 servings

Daikon radish
Boiled eggs
Dashi stock
400 ml
3 tablespoons
●Soy sauce
2-3 tablespoons
1-2 tablespoons
1 tablespoon
Green onions (finely sliced)

1. Roughly chop the daikon radish and parboil it in the microwave. See Recipe ID: 2025852 .
2. Soft boil the eggs and peel. See Recipe ID: 2007869.
3. Put all the ingredients except for the eggs in a saucepan and let simmer for 13 minutes over low to medium heat. Add the eggs and let simmer for another 2-3 minutes. Finally, turn the heat to high to glaze.
4. Slice the eggs in half. Put the daikon radish and the chikuwa into serving bowls, add the eggs and sprinkle on some green onions.

Story Behind this Recipe

I just came up with this, using what I had in my kitchen.
You can use atsuage instead of fish paste sticks if you like.
If you would prefer the eggs to have a stewed texture, don't simmer them, just let them cook on residual heat. The dashi stock will give them a nice color. This is also nice made with chicken wings. See Recipe ID: 626197.
