Healthy But Hearty Scrambled Tofu

Scramble some tofu and vegetables together for wholesome, balanced meal. You'll be finishing off bowls of rice with this one side dish.

Ingredients: 4 servings

Tofu
1 block
Carrot
1/2
Onion
1/4
Chikuwa fish paste sticks

Shiitake mushrooms

Green onion or scallion

★Dashi stock
1/2 cup
★Soy sauce
2 tablespoons
Mirin, sake
1 tablespoon
★Sugar
1 teaspoon

Steps

1. Drain any excess moisture away from the tofu. (If you're short on time, try wrapping it in a couple sheets of paper towel and microwaving it very briefly.)
2. Mince your vegetables. After you're done, combine the seasoning ingredients marked with ★.
3. Pour in 1 tablespoon of sesame oil into your frying pan (amount not listed above), and start stir-frying your tofu.
4. Added your vegetables and stir-fry some more. Add in the ★-marked ingredients, and cook until half the amount of moisture is left in the pan.
5. Stir your egg, and pour it into the frying pan, combining it well with the other ingredients.
6. Once the egg from Step 5 has cooked through, plate your scrambled tofu. Sprinkle with chopped green onions to finish.

Story Behind this Recipe

I make this whenever I have leftover tofu around. It's so delicious, I end up scarfing down entire plates of it with bowls of rice.
