Drain any excess moisture away from the tofu. (If you're short on time, try wrapping it in a couple sheets of paper towel and microwaving it very briefly.)
Mince your vegetables. After you're done, combine the seasoning ingredients marked with ★.
Pour in 1 tablespoon of sesame oil into your frying pan (amount not listed above), and start stir-frying your tofu.
Added your vegetables and stir-fry some more. Add in the ★-marked ingredients, and cook until half the amount of moisture is left in the pan.
Stir your egg, and pour it into the frying pan, combining it well with the other ingredients.
Once the egg from Step 5 has cooked through, plate your scrambled tofu. Sprinkle with chopped green onions to finish.
Story Behind this Recipe
I make this whenever I have leftover tofu around. It's so delicious, I end up scarfing down entire plates of it with bowls of rice.
Even if you can't completely drain away all of the moisture from the tofu, if you cook it well enough and let it evaporate in the pan, you'll be alright. Try not to cook the green onions along with the other ingredients, since it'll take away their pretty green color. Sprinkling them on top of the tofu at the very end should work well. You change the vegetables you add here to adjust the nutrition content of the dish.
