Basic Plain Bagels

After many experiments, I was finally able to shape these plain bagels really nicely.

Ingredients: 8 bagels

Bread flour (Superking flour)
300 g
Salt (Okinawa sea salt)
1 teaspoon
Sugar (cane sugar)
1 tablespoon
Dry yeast (saf)
1 teaspoon
180 ml
Molasses for kettle boiling
1 tablespoon


1. Use really fine salt for the best results. Here's the salt that I used.
2. Knead the dough in a bread machine. Take it out and divide into 8 portions. Cover with a damp cloth and let rest for 10 minutes.
3. Punch out the air and roll the dough out.
4. Fold in half from both sides.
5. Again fold the dough in half. Close the seam well. Roll it around several times to close seam properly.
6. Flatten one end with a rolling pin. Fold in the thinner side and close.
7. Twist with the seam facing down.
8. Repeat to shape 8 bagels.
9. Let rise for 30 minutes at 35℃.
10. Add the molasses into a large amount of hot water. Kettle boil the bagel: 40 seconds for one side, and flip over for another 40 seconds.
11. Drain well and align onto a baking tray.
12. Bake for 15 minutes in a 190℃ preheated oven.

I've tried so many ways to shape these bagels nicely. And I've also tried many kinds if ingredients, and kinds of flour, salt, and sugar. Finally, I was able to put together this recipe for plain bagels.
