Slice the tomatoes in half and mince the myoga ginger.
In a deep bowl, add the vinegar and sugar. Mix lightly.
Add the tomatoes and minced myoga ginger, and toss together. Refrigerate overnight and it's done.
Story Behind this Recipe
When I went to visit my parents, my mom made a huge batch of this. After the first bite, I was hooked. I came up with this recipe by estimating my mom's measurements.
If you peel the tomatoes, they will have a smoother texture, but they are delicious unpeeled as they still absorb the flavor. If substituting a regular-sized tomato, chop it before adding it to the dressing.
