Pancakes with Carrot & Pancake Mix

I grated some carrot into the pancake mix I bought from the store. It resulted in a moist pancake that even people who don't like carrots can eat.

Ingredients: 2-3 servings

●Pancake mix
200 g
150 g
●Egg (Medium)
50 g
a little


1. Peel and grate the carrot. Combine the ● ingredients in a bowl and mix well with a whisk. Then mix in the carrot.
2. Place a heated frying pan on top of a damp cloth, then back on the heat and pour in 1 ladle of batter.
3. When the surface of the batter starts to bubble, flip it over and cook for 2-3 more minutes. Cook the rest of the batter in the same way.
4. Transfer the pancakes to a plate and top with butter. Then add your favourite toppings like maple syrup or honey.

Story Behind this Recipe

This is a recipe I thought of when I wanted to use some store-bought pancake mix and is now a pretty common sight in our house. They taste great with yoghurt substituted in for the milk as well, Recipe ID: 2321721.
