Peel and grate the carrot. Combine the ● ingredients in a bowl and mix well with a whisk. Then mix in the carrot.
Place a heated frying pan on top of a damp cloth, then back on the heat and pour in 1 ladle of batter.
When the surface of the batter starts to bubble, flip it over and cook for 2-3 more minutes. Cook the rest of the batter in the same way.
Transfer the pancakes to a plate and top with butter. Then add your favourite toppings like maple syrup or honey.
Story Behind this Recipe
This is a recipe I thought of when I wanted to use some store-bought pancake mix and is now a pretty common sight in our house. They taste great with yoghurt substituted in for the milk as well, Recipe ID: 2321721.
For Step 2 - If you are using a fluorine-coated pan then please don't use any oil. If you are using any other type of pan please grease it with a thin layer of oil. If you make small pancakes this recipe will yield 7-8 of them. Feel free to make larger pancakes if you'd prefer though.
