Thick Potato Wedges with Skins

These potato wedges are fried carefully in oil at a low heat. This results in crispy and fluffy wedges.

Ingredients: 2 servings

Krazy Salt
a small amount
Dried parsley
a pinch of each
Frying oil
as needed


1. Wash the potatoes in water and cut them into thick wedges. Put the wedges back together and wrap them in cling film.
2. Heat the potatoes in the microwave for 2 minutes, then wash them to remove any stickiness.
3. Place the wedges in a frying pan with some cold oil and heat them up. While keeping an eye on them, heat the potatoes for 15 minutes over low-medium heat until soft.
4. When the potatoes start to float to the surface of the oil, turn the heat to high and fry them until they become golden brown. (This should take 1-2 minutes.)
5. Once the wedges have been crisply fried, drain the oil and sprinkle some Krazy Salt over the top. Then sprinkle over some parsley and serve with ketchup.
