Chogochujang Korean Vinegar Red Chili Miso Sauce

Chogochujang, or Korean vinegar chili miso sauce, goes well with any food such as poached meat, seafood, sashimi and steamed vegetables. We love using this sauce for sashimi konnyaku.

Ingredients: Makes about 150 ml

For the easy sauce recipe:
❍ Miso
2.5 tablespoons
❍ Vinegar
4-6 tablespoons
❍ Sugar
2-3 tablespoons
❍ Mirin
2 tablespoons
❍ Soy sauce
1 teaspoon
❍ Coarsely ground red chilli
1/2-1 tablespoon

1-2 cloves
❍ Juice from grated ginger
1/3 teaspoon
For the authentic recipe:

● Vinegar
4-6 tablespoons

◇ Coarsely powdered chilli (Korean)
1/2-1 teaspoon
◇ Garlic (grated)
1-2 cloves
◇ Juice from grated ginger
1/3 teaspoon

Steps

1. For each recipe, just combine the ❍, ● and ◇ ingredients. Before serving add some lemon juice to refresh the taste.

Story Behind this Recipe

When I was a child, my mother learnt how to make this sauce from someone. I have been using this sauce since then. My mother and I made this sauce with roughly measured amounts of ingredients, so our sauces taste different. I decided to create a recipe for this sauce for my children.
