Rich, Creamy Almond Tofu

This is a rich and creamy almond tofu. I make this all the time!

Ingredients: 4 or 5 small cups

Chinese apricot kernel flour
3 tablespoons
3 tablespoons
Heavy cream
100 ml
250 ml
Gelatin powder
Hot water
2 tablespoons


1. Dissolve the gelatin powder in hot water. Combine sugar and almond powder into a pot and stir well.
2. Add heavy cream and milk, heat in low heat. Keep mixing with a spatula. When the edge of the mixture starts to bubble, turn off the heat. Try not to let it boil over.
3. Add the dissolved gelatin, and mix well. Strain the mixture to a bowl and let cool. Pour in each cup, and chill in fridge to set.
