Refreshing Chinese-Style Eggplants

These eggplants are lightly flavored so they're great even when you have no appetite.

Ingredients: 2 servings

Eggplant

Okra
4
Sauce mixture:
Vinegar
50 ml
Kombu based mentsuyu
1 tablespoon
Sesame oil
1 tablespoon
Sugar
1 tablespoon
Juice from grating the ginger
1 tablespoon
Oil for deep frying
as needed

Steps

1. Cut the eggplants in half lengthwise. Cut 2-3 diagonal notches into the skin. Cut a 1 cm notch into the okra.
2. Using the oil for deep-frying, fry the eggplants starting from the skin side until slightly browned. Also deep-fry the okra.
3. Dish up the okra and eggplants. Serve with the sauce mixture that you've mixed together.
