You don't need a gas hob to make this dish, so it's a handy recipe to make during the hot summer days. Microwaving, rather than sautéing the vegetables, makes this dish lighter and more fragrant. This is our favourite way of making this dish.
Aubergines and courgettes tend to lose their texture quickly if they are cooked for too long. To cool them down quickly, spread them onto a colander straight away. They'll retain their colours too. After microwaving and if they are still hard, do not microwave again. Cook through with the residual heat. You need to squeeze out the excess moisture, but not too hard or the texture of the vegetables is ruined.
