Mix all of the ingredients apart from the butter. Don't worry too much if the mayonnaise doesn't mix in perfectly.
Melt some butter in a frying pan and add the mixture from Step 1. Swirl the egg mixture around once with a pair of chopsticks while it's uncooked. When the surface starts to cook, add the chicken rice and turn off the heat.
Use a spatula to fold over both sides of the egg crepe. Move the omurice to one side of the pan, and flip over. Then you're done.

My kids don't like it when their eggs are too soft or half-cooked, so I wanted to make an egg crepe that wouldn't harden even when thoroughly cooked through!
I used a medium-sized egg and a little over 150 g of rice for the omurice shown in the photo above. Prepare your omurice over medium heat.
