Stir Fry Goya (Bitter Melon) and Scallops in Mayonnaise

Ingredients: 2 servings

Bitter melon
Boiled scallops (or baby scallops)
150 g
1 (small)
☆ Mayonnaise
3 tablespoons
☆ soy sauce
2 teaspoons
☆ Mirin
1 tablespoon
To taste
Vegetable oil for stir-frying
As needed


1. Partially defrost the scallops and drain. Thinly slice the onions.
2. Remove the seeds and pith from the goya. Slice thinly, sprinkle on salt, rub, wash, and drain (this is to remove the bitterness and scum).
3. Heat oil in a pan and fry the scallops and bitter melon. When it is thoroughly cooked, add the ☆ ingredients and taste as you go along, adding salt if necessary. Then it's done.
