Naples-style Octopus Salad

This is a simple recipe seasoned with lots of olive oil and freshly squeezed lemon juice. I wanted to reproduce that delicious octopus salad I had at Naples.

Ingredients: 2 to 3 Servings

Steamed octopus
200 g
Raw scallops
100 g
Cucumber
1/2
Carrot
1/2
Tomato
1/2
Lemon
1/2
Extra virgin olive oil
3 tablespoons

Steps

1. Chop up the cucumber, carrot (peeled), and tomato (seeds removed) into bite sized pieces.
2. Chop the octopus and scallops into bite sizes.
3. Add olive oil and mix everything in a bowl. Cover with plastic wrap and chill in the fridge for 10 minutes.
4. Serve with lemon to squeeze right before eating.
