Onion Soup with Pancetta

The flavor and saltiness of the pancetta is a perfect match to the sweetness of the onions!

The pancetta coated with herbs really makes this a delicious soup.

Ingredients: 4 servings

Homemade pancetta
100 g
800 ml
Chicken stock cubes
80 ml
to taste


1. Dice the homemade pancetta into 7 mm cubes. Sauté until the fat melts into grease, which you can discard.
2. Chop the onion into 7 mm rounds, and break them up as you add them to the pan. Sauté everything together over medium heat.
3. Once the onions are cooked until the edges become translucent, pour in the water and sake. Break in the chicken stock cubes. Cover the pan and let it simmer.
4. Taste, and season with salt. It's done when it tastes perfect!
5. Serve with Parmesan cheese or dried parsley!
